Have rashly agreed to organise a twinning with a UK school (am in Italy) A teacher friend of mine in Scotland has agreed to do it with me, but I just wondered if anyone had any experience or any ideas of the sort of thing we could do, beyond the penpal/website sort of thing....

Have you tried this site? www.globalgateway.org.uk
It's got advice about finding a school (which you don't need) but also I think case studies about different types of projects and collaborations.
Exchange visits are always popular with staff and students!

Hi Bucharest. I set up a twinning at my old school and we did a bilingual version of Romeo and Juliet. Since I moved on this tradition has continued with a different play each year.

Brilliant! Thank you, I'll have a look at the site, and see if there are any more around as well...
