I just wondering when and how would I find out what subjects my child should be learning as she will be sitting her exams next year x

I don’t know if there’s an official list but I’d suggest

maths
English language
then 3 or 4 others depending on what their aims are. This should allow progression onto a few different options.

If you are EHE’ing DD can sit whatever subjects you/she wants and needs.

I'm confused. If they are due to sit exams next year, I presume GCSEs, aren't they already following the syllabus for those subjects?

If you're home educating, ie doing it completely yourselves with no input from any type of school, then you need to choose the subjects yourselves. You need to find an exam centre that facilitates external candidates and find out which subjects they facilitate and which exam boards. Then look up the syllabus for that exam board and cover those topics.

A lot of home educators work out what their child might want to do post 16 and work back from there depending on what they need to access that. If it’s not yet clear then you might want to aim for English, maths and then maybe three others as many courses just need five including English language and maths. There’s a Wiki home ed exams page that’s really useful and lots of home ed Facebook exam groups.

Can you get access to careers advice readily?

GCSEs can be done as 1 year courses.

Just had a look and that home Ed resource is great.
