Gcse food tech practical. What to make

Can anyone help my ds decide what to make. Theyve had supply teacher for year 11 up to now, so have done no cooking this year. Not sure if this is normal or not. But he doesnt know what to do. We were thinking cheesecake with seasonal twist but all recipes talk hours in fridge so not sure how he would present that in a double lesson. Anyone got any ideas for a ds who has little to no confidence but can practise a bit before monday. Thanks

My DD started Food Tech but didn't finish it due to covid.

What is the 'brief'?
Is this in prep for making a 2 or 3 course meal later under exam conditions?

Are you/he aware of the mark scheme he will be scored against? iirc there are things regarding showing skills as well as 'just' tasting nice. DD never got that far sadly.

e.g. Profiteroles would show choux pastry, meringue would show something or other, little biscuits on the side shows an extra thing.

So cheesecake if he makes his own biscuit base and topping / decoration shows various skills, though don't know if it works in the time.
