If my memory serves my correctly (my DS left last year) the boys do Winchester College Football in the second term so I wouldn't worry about buying football boots now. Secondly they have an account at the local sports shop so can easily purchase anything they might need.
We bought 2 rugby shirts, as requested on the list, and they were never worn, I sent them to the second hand shop at the end of the first year. If we did buy football boots (my DS is a not a team sports player so I might not have done) then they would have been either ones he worn at prep school or if new ones the sort of bog standard ones you buy in any sports shop also I'm sure if they had to have a certain type of stud it would be clearly stated on the list.
My advise is don't buy too much games kit wait till they get there and see what they need.
It's definitely worth investing in two pairs of really top quality school shoes we bought Loakes towards the end and one pair is still going strong despite being three years old. The boys walk a lot every day especially if they're in the house like Cooks and Hoppers and good quality school shoes not only are more comfortable they will last much longer than cheaper ones.

Doesn't it depend on the weather? Little rain and firm ground would mean rubber or plastic studs; more rain and soggy pitches would mean metal studs.

DS has never mentioned stud types, though it used to be a bit of a thing at prep school.

I'd get him plastic (or interchangeable). They often pick new sports anyway.
