Edinburgh- cocktails?

Looking for ideas for lovely cocktails in Edinburgh - somewhere we can dress up - for a 40th.

Also if anyone has any other nice ideas - live music maybe? I know about the stand so may go there for some comedy but have a lovely dress I'd love to wear somewhere fancy!

Balmoral? The Dome? Anyone who has experienced somewhere they'd recommend please let me know as I've not been in Edinburgh for ages!
