Can someone please tell me how you cook stew. Or point me in the direction of a everyday Scottish cookbook.

I have books for Chinese, Italian, diet this and that but nothing for simple Scottish stuff like my mum makes.

I could ask her but I'm actually embarrassed 😳 that I don't already know how to cook stew!

I do mine in the slow cooker.

I put in a veg stock pot with about 500ml of water.
Add in about 1lb of stew, chopped carrots, onions, potatoes and put on high for about 4 hours, then low for another 2-3 hours.
I then add in a beef casserole gravy mix sachet from Aldi and it's delicious

How I make stew

In a bowl add 1tbsp of cornflour and 1tbsp of bisto granules to 500g of beef stew

Add beef to frying pan and brown.

Add chopped onion and carrot and fry for a few mins.

Cover (just) with boiling water and add beef stock cube.

Transfer to slow cooker for 8 hours.

Stir in some bisto gravy granules before serving if desired.

You can also add sausages (fry for a few mins before adding to slow cooker

And can also add potato's to the slow cooker but I prefer to serve with mash.

I use both pearl barley and make dumplings.

I also add swede, carrots and potato.

Really got me wanting a good stew now! Might make a big one at the weekend and freeze into portions.

I would add a heaped teaspoon of curry powder to mine as well as a bouquet garni. I would thicken with either a packet of oxtail or beef and vegetable soup

II cry off the onion and brown the beef, add carrots, pearl barley, sometimes brown lentils, plus any veg that need using up. Stock cube. Herbs, fresh or dried. Also a tablespoon of pickle or chutney to give it some bite, dash of Worcester sauce. Sometimes tomatoes. A tin of baked beans is lovely. You can add what you want really, stew is so flexible. And with herby dumplings, what could be better on a winter evening.

Coat diced meat in flour
Brown off meat, remove
Soften onions
Add meat, Oxo cubes, steak seasoning, worcester sauce, tomato puree, water
Simmer on low for as long as it takes for meat to become tender

Rump steak will take a couple to 3 hours, cheaper cuts such as shoulder steak will be much much longer but I personally think tastes meatier and holds together better.

I buy 3kg bags of meat from butcher and make in a huge pot, then freeze in family meal size portions to serve with potatoes, veg and dumplings or make into a steak pie.
