What is the right/best thing to do?

MIL offered to have the kids over night. Both PIL have colds so we asked if they would rather not have them. Kids went, this morning FIL sounded fed up and when I asked why he said he had a cold. Asked MIL if she wanted me to get the kids as FIL sounded fed up. She said no, he just has a cold.

Meant to be getting them about 5-5.30. Should we go earlier? DH has agreed we would.

MIL is having the kids more often as she knows I am struggling but both DH and I feel it isn't worth it if we are left with feeling guilty.

Go and pick them up. Your kids won't have a good time if your in laws are fed up and ill.

MIL will make sure they do have a good time. She prefers to have them without FIL there. I am going once DS2 has woken up.
