What to do for birthday

Looking for inspiration I am usually a fantastic birthday planner for my OH however this year I'm just drawing a blank I like to go all out, castle stays , lodges something a bit different and a bit quirky, for this birthday I am at a loss and looking to you lovely people for inspiration, where would you take your OH for a night away. We have a little boy who we haven't spent many nights away from so to get a night away for some us time is very overdue but I just can't think where to go/ what to do?

Budget probably max 500 for a one night stay and maybe an activity, happy to travel we are north west but happy to travel for something good!
