Home Insurance fitting costs

After accidental water damage 1/3 of my kitchen is ruined. I know LVIC will pay 50% to help replace the undamaged, discontinued units but when looking at costs, do insurers include fitting cost when deciding how much to offer to replace?

If unsafe wiring is discovered after insurance claim, to insurers put right and charge you or cover the cost? I have water damage to my kitchen but they have discovered some unsafe wiring in the process? Assuming they have an obligation to 'put it right' rather than leave it, but would they expect me to pay? Or contribute towards it?
