Varnish recommendations for a dining table?

Hoping for some recommendations on which varnish to use on my dining table. Something really durable of course. I've attached photos of the current table colour (the lighter photo), and of the colour I'm hoping to achieve (darker photo). I know I won't get the accents in the new colour, and that's ok.

I've no idea where to start really. Does the starting colour determine which colour vanish to go for? A bit like hair dye? Or will the table become whatever colour is on the tin regardless of how it starts?

I really am clueless!

For hard wearing you could use Ronseal Diamond Hard Floor Varnish. There are a number of shades.

Difficult to say the final colour, but I remember it being said for a CLEAR varnish...
"the colour when wet,
is the colour you'll get"
this assumes any existing varnish/wax etc. has been removed and you are back to bare wood.
