Kitchen redesign and insurance claim - what should I know?

Hello,

We've recently had a leak under our kitchen floor which means the entire floor needs to come out plus skirting boards and parts of the plaster in order to repair and dry.

The cabinets won't be saveable, nor the worktop because its cut for those specific cabinets, so basically the whole kitchen except some of our appliances is going.

The question is: what do I need to know? If you've been through this process what would you have loved to have known? I'm hoping for top tips on managing the claim, the work on the kitchen and coping without a kitchen for several months with a toddler in the house (and we don't have a utility so our kitchen includes our washing machine).

Also, if you have designed a kitchen where space is at a premium, what are the must-do clever things to put in?! We're already thinking we'll use the opportunity to buy a new oven as we've got an old 90cm rangemaster which is really inefficient and bulky - we're only a family of 3 so we don't use it to full capacity.
