We will be putting a prep sink at the end of the island to be used only for food prep, so no washing up, hand washing etc.

What size would you recommend?

It depends on what you cook. I grow and cook a lot of our veg and so for me I need a really big sink to wash them in- and indeed to wash/rinse other purchased fruit and veg. I also need a big sink to wash up pots and pans used in cooking. One of my pet hates is the tiny shallow sinks that many kitchen suppliers think that is all we need. They are completely not fit for purpose, unless you live on takeaways.

If it helps, I have two massive sinks purchased very cheaply from a catering supplier. There are several of those online, of various levels of quality. . I used Adexa. Functional and perfectly OK.
