Loft conversion started. Plan holiday?

Our loft conversion is starting in a few weeks and likely to start through the summer. We’ll have to live in the house for most of it, could escape to a relatives house for a few days if needed.

for those who have gone through a loft conversion, would we be ok to book a holiday abroad, for just one week? Or do we need to be on site nearly everyday!?

No don't go away.

We have done a variety of extensions, and the loft conversion was by far the worst for needing quick decisions. I think this was because it was hard to see things like where the floor level would be in advance and therefore which row of tiles we wanted windows to start at (ie the window height) etc.

No, I'd never leave tradesmen for even a full day. You really need to be there to watch what they're doing, correct mistakes they're making, and to answer their queries (which WILL crop up as you can't think/plan everything). Last thing you want them to do is second guess decisions as they're bad enough at doing what you've already told them to do, so heaven knows what they'd do if they had to use their initiative.

We've nearly finished one at the moment. No, I wouldn't. There are quite a few things that would have been missed/wrong had we not been up there every day looking or been here to make previously un thought of decisions.
