Poorly laid patio - what do I do?

We have just had our large patio relaid (approx 70m2). We haven't paid for the all the work yet.

We wet it with the hose today and there's lots of areas where the water stands. About 5 separate large puddle areas, some end up more than 1cm deep.

We're so disappointed but dreading the conversation with the person who laid it (who is a very nice chap).

What do we say? I can't see that it can be fixed other than taking it up and relaying it. But they have laid on on a really thick mortar base so can't see that they can take it up without destroying the Yorkshire stone (they have relaid the slabs we already have)

Be sure to bury the chap under there before relaying it.

Show him the evidence and don’t pay until it drains. Nice chap or not. It’s just business.

I worry that he will walk away without payment. But the patio is now much harder to take up to relay than it was before if we needed to get someone else in. So I would like him to fix it.

It will be an ice rink in the winter.
