Can anything be done to rescue it?

If the wood is still sound and not rotten use a orbital or belt sander ( hire one from hss or similar) and sand off all the old varnish the treat with either linseed oil or yacht varnish to protect the wood.

Sanding will create loads of dist so take everything you can off the work tops before you start and wear a mask.
