First fix to completion - how much more does it cost?

Hi all, we are in process of selecting builder for our renovation project (refurbishment kitchen, dining, utility and lounge, not extending but knocking down walls, removing chimneys etc). One builder has quoted for structural alterations up to first fix, another has quoted for the whole project (so second fix, labour for kitchen installation etc).

Please can I know

  1. in percentage terms does anyone have a guide as to roughly how much more it would cost to take me from first fix to completion? I'll also ask the builder but wanted to get other opinions
  2. the builder who quoted to first fix only says this approach is recommended as it keeps his quotes accurate - whereas I am leaning towards the second builder who quoted for the whole lot as it gives me more certainty of costs (all other things being equal). Also looking for advice on this?
