Sunroom or complete reconfigure

After years of trying to find a new house or trying to get planning permission for a large extension we have decided we are just going to have to work with what we have got.

Currently we have a part garage conversion used as office/utility, a lounge diner, small kitchen and conservatory

Our plan is to do a garage conversion to make an extra bedroom but then we lose the office space.

The conservatory is a waste of space so we are thinking of removing it. Initially our plan was to replace it with a sun room and have it as an office area.

However we are now wondering whether it would be worth completing changing the layout downstairs so split the lounge/diner into a separate lounge then join the kitchen, dining room space and sun room space into a kitchen diner.

This would be a significant larger amount of money so would it be worth it?

I think it would increase saleability of our house for the future but unlikely to increase the value.
