How do the insurers check that you are doing your weekly checks on
an empty property?
Obviously you would want to do this for your own peace of mind
but how would they confirm this?

They wouldn’t necessarily check, but it something happened, they would ask certain questions to see when the property had last been checked. At that point the owner would have to tell the truth, and risk invalidating the insurance, or lie and risk committing insurance fraud.

Our insurers required us to have a logbook in the property of dates and times of checks signed each time by whoever went to do it

If the insurance company doesn't specify how, you could take a couple of selfies on each visit, one outside the front of the property and one inside with time and date stamp on and store them in case something happens and you need to provide evidence.
