Bamboo worktops - help!

We've just moved into a new housewith bamboo everywhere.... bathroom floors, window ledges... and the kitchen worktop. I am used to marble and this bamboo is driving me crazy after three weeks, it marks so easily. I am a messy cook and three weeks in I already have water marks, oil marks and scratches even though I am using boards. Is this normal? It was sanded and oiled just before we moved in. Can anyone suggets anything I can do to make me love it and feel comfortable in my kitchen please?

maybe as a temporary measure replace the worktops with something more robust, good laminate worktops are not that expensive (our duropal ones were £142 each) which should last a good 3-5 years

Do you know how many coats of oil it had put on it?
We've had bamboo worktop in our kitchen for 5 years now and it still looks pretty good. It was treated with 5 coats of oil before it was installed.
I do make sure that i dont let water sit on it for too long and mop up spills as soon as i can, but generally it still looks really good.
Perhaps put a few more coats of oil on?
