Half panelled bathroom and plasterboard

Niche question here. We are planning a bathroom refit and will be replacing our repugnant 15 year old floor to ceiling panels with something else.

I am either considering simple tongue and groove or large plain white tiles to half way up the wall then paint above (obvs shower area will have floor to ceiling tile/panel). Tending towards the panelling I think.

Walls in the rest of the house are plasterboard and I assume will be the same under current panelling of hideousness. DH is concerned a half panel/tiled room will mean the painted bit of the walls will get damp. Anyone know?

I think you'd need the moisture resistant plasterboard, then a bathroom specific paint and a good extractor fan unit.
