Has anyone ever bought a commercial property such as a pub and successfully converted it to a family home?

I haven't but I've seen a few driving around that have been converted. It's not that unusual.

No, sadly it isn't.

Old churches are also sometimes converted to homes.

Pubs tend to get converted to shops...but that happens as they don't need planning permission apparently

I lived in a converted pub - it was lovely. I think the conversions tend to be done by developers though as you need deep pockets

Depends on the building. If its a pub then relatively simple as a lot started out as a house anyway. Churches are harder and more complicated, high street type offices that used to be terraced housing are again relatively simple.
