We put our house on the market on Monday. When can we expect viewing requests?

Absolutely anytime. MIL put her house on the market and had sold it by the end of the same day!

When we sold our last house I think the first viewing was about 2 days later.

Yes anytime, though depends on the state of the market in your area. We put our last place up Monday and EA had organised open day Saturday and it sold that day. Maybe start clearing clutter in readiness for viewings if you haven’t started already.
