I want to buy some cheap vinyl to replace the stinking carpet in the bathroom of our new house until we are ready to do it up properly.

There's one step in the bathroom up to the bath. Is vinyl going to work on a step?

I guess it'll need some sort of edging strip along the nose of the step. Are there non metal options as i would be worried about the kids slipping and hurting themselves on it?

You could use stripwood as edging. If you can find a hockey-stick moulding of the right size it will form a nose. Paint or varnish it before final fix.
