Can I apply for a mortgage with a job offer letter

DH and I are hoping to buy our first home this year and have a 10% deposit plus extra for fees and duty etc. I am currently on mat leave having ended a temporary contract but have a permanent contract lined up for April.
My question is, can we apply for a mortgage using my offer letter as proof of salary or will we have to wait until I start and am actually receiving the salary? We haven't even started looking yet, so not in any rush. I just don't want to fall in love with something and then find out we can't get it.

You're normally required to have completed your probationary period sorry.

I won't be having a probationary period. I'm in Education and we don't really use them. Will that make a difference?

No, you will need 3 months payslips.
