cooking for kids - wine in the receipe - slow cooker - evaporates?

2 DC under 5 - I cook beef with wine on a low temperature in a slow cooker for 7 hours. as wine is not boiling - will it
evaporate? I have heard tgat it does not evaporate?

but even if it did evaporate what is then the point of putting the wine in?? use a different sauce or herbs or cook it in a different way

Yes alcohol evaporates at 70C. Adding wine adds flavour not alcohol to a dish eg coq au vin, spaghetti bolognese, boeuf bourginon. The alcohol content will be long gone before you serve it. It's fine.

It should evaporate, but because the lid is on it condenses on that and drips back in again, I simmer it in a pan for a few minutes first, that gives a lovely concentrated flavour without the alcohol and eithout adding as much liquid.
