Could you please tell me your healthy lunch ideas?

Today I had a large sweet potato with tuna & sriracha sauce; cucumber, tomatoes & sweetcorn on the side.

Trying to eat well for baby but I suppose I should do this all the time. Anyway, I used to have a very old fashioned sandwich with crisps on the side. Nothing wrong what that but trying to have more fresh foods.

I made this soup on Tuesday but adapted it a bit: didn't have celery or chickpeas so added butter beans and mushrooms, and also added chilli powder and oregano. It was lovely😀with a piece of buttered toast and I cut corners so it only took 15 minutes with enough to zap in the microwave for another 3 portions.

An easy way to be quick but healthy is to make more of dinner and just eat leftovers, providing you cook from scratch in the evening.

Dinners don't have to be long to make. You can cook a meat, a fish or eggs and have one portion of veggies and one portion of cereal (quinoa, bulgur, brown rice). For vegetarian and vegan options, replace the meat, fish or eggs with pulses or tofu.
If you have something bread based, pick a brown bread, much healthier. And for snacks or desserts, plain yoghurt, fruits or nuts.

You could have your sandwich, but instead of crisps on the side, cut up cucumber, pepper and carrot sticks and dip them in hummus. That was pretty much my go to lunch when I was pregnant, except my second trimester when I craved porridge and so ate that for lunch. I also had a piece of fruit for dessert

For dinners, meat such as fish or chicken with potatoes, brown rice, quinoa, etc and veggies or salad, or a lentil bolognese/chilli with plenty of veggies in the sauce or a veggie curry, stir fries, soups...
