Hi x
Just been diagnosed with gestational diabetes 😔
Cant even tell you how upset I am...
Can I get advice ideas from any of you that had it ?
What kind of bread you having cheese etc?

IF you need the meds, you need the meds. I went onto Metformin. But still had to work on diet.

A few suggestions:

If you like mince/spagh bol etc make the mince but serve it with a few new potatoes/sweet potatoe/butternut chunks and lots of veg. I always found I liked courgettes with it (I never bothered with trying to make fake spaghetti).

I hate a LOT of grilled/fried lamb/pork/beef in steak/chop form with piles of veggies and either no carbs or just a slice of bread or two or three new potatoes. I also used to roast vegetables with a punnet of tomatoes and whiz that up, sometimes with cream cheese, to make a sort of thick sauce which for whatever reason, I found very satisfying and helped me miss the carbs less when eating it with my meat.

If I recall, crumbed stuff can be good if you don't add additional carbs? I have a vague memory of buying crumbed chicken breasts for convenience and having with salad or vegetables.

And snack/treat when I really needed something.... a small hot chocolate made with full fat milk and a bit of cream, cocoa and sweetened with sweetener instead of sugar. Surprisingly low carb.
