GD and evening meals - help?

I've been diagnosed with GD and I'm really struggling with what to eat particularly evening meals as I've gone off most sources of protein in this pregnancy (meat, eggs, etc) and struggle with most veg too! Any ideas?

It might help you more to substitute the carbs to lower carb forms. I don’t have GD but am desperately trying to prevent it - I substituted potatoes with cauliflower, and reduce toast to 1 slice a day. I have also upped my intake of raw and lightly cooked green / non-root veg. Cheese and milk helps me keep my protein up - as do nuts and lentils.

One of my really quick dinners is a twist on mozzarella and tomato salad (inspired by a pizza express craving)

I have one slice of wholemeal bread with lots of pesto on top, loads of chopped cherry tomatoes seasoned with a nice olive oil, salt & pepper etc and then a whole ball of mozzarella cheese.

I always find it really filling and my bloods are always nicely at the lower-mid end of the target after eating it.

Teddybear45 I've been advised to have a small portion of carbs with every meal (and my levels are too low if I don't have them) but I'm struggling with enough protein. I hope you manage to prevent it - I didn't even with doing everything right Sad

Bingbangbingbangbong Sounds lovely. I've been having mozzarella salad for lunch most days! I did say to the midwife I'd be eating a lot of cheese to make up for everything else I can't stomach!
