Suggestions for easy dinner tonight - 16w with horrid headache and poorly DD

Hi all

My DD is asleep downstairs as she has a bad bladder infection, poor thing and had me up half the night in pain. She missed her first day back at school today, so is resting. Hopefully she will get better v soon.

I'm 16w today and feeling a bit off and odd... achey neck, tired, slightly headachey. I hope it's nothing serious that a good night's sleep can't cure. I took some chicken out to defrost for dinner but I really feel too tired and ill to cook it to be honest. DD is asleep and still in her PJs, DH is away until tomorrow evening, and I don't have any other food to make a meal that isn't frozen. I also don't have any money for a takeaway either.

Help! What to do that is quick, easy and nutritious to eat that doesn't involve takeaways or scrounging off neighbours? Our food budget is always tight and doesn't stretch for extras. I can't take DD out to the shops as she is ill and in PJs, so it looks like I'll have to either cook the chicken or improvise. ANy suggestions?

Nicey ricey (rice mixed with a can of condensed chicken soup and frozen veg usually peas stirred in)
Pesto pasta
Cold plate of ham or similar, chopped up cucumber tomato peppers and a few crisps let her eat it sat on a blanket and tell her you’re having an indoor picnic.

poached egg on toast or with beans /peas.
I wouldn't stress about it if you just eat toast - it's just one meal.

Or cereal is ace when feeling miserable.

Could you just put the chicken in the oven for 25 mins, bit of oil, salt etc.... Then a shred it into a large pan, add 1-2 litres of chicken or vegetable stock, chop a few carrots in, a little coriander or tin of sweet corn if you have, add a bit of pasta or broken little pieces of spaghetti or a little rice.... Let it simmer for 15 mins and theres since chicken noodle soup? It sounds harder than it is... But great for colds and be saved and used for next day... Xx

I’m to try the pasta / sauce and veggies as a quick and easy dinner. I had scrambled eggs yesterday, don’t feel like any today, and don’t have any other ‘cupboard staples’ apart from some pasata and garlic/seasoning etc. So I will prob just do a quick pasta thing for me and a picnic type thing for my DD.

I am hoping that my odd aches are all down to the lack of sleep/baby growing. The last thing I want is that to worry about on top of DD being ill... Sad

Plain pasta with a little butter stirred in and some grated cheese. Fast and easy.

We have about two eggs and carrots, onion, garlic, peppers etc but am saving some of this for a shepherd’s pie on Sunday as the PIL are coming tomorrow eve... so I will make some improvised dinner with a couple of bits and some pasta.Smile

Cook your chicken will go off other wise either eat it or keep for tomorrow shred it through your pasta
