Yea or ney?? I've been quite strict at not eating runny yokes so to have just planned to make ice cream with raw yokes I'm a bit flummoxed.

What I'd really like is for you to tell me the freezing process kills salmonella!!!!

Are the yolks not cooked in the custard base before it gets frozen in which case they're not raw anymore? Unless you make ice cream another way?

Are they in date lion stamped eggs? Or do you make a custard before freezing it? If yes to either it's fine.

Weirdly the recipe just said mix the yokes with cream and freeze, no cooking of the custard.

After a bit of dithering, I found a different recipe: double cream, fresh custard and Christmas pudding. I am predicting great things!

Thanks for your help, ladies!! K
