OK, so how long am I supposed to try this for before I give up??

We started on Saturday so today is day 5.

On Saturday we had loads of accidents, but we also had 7 wees on the potty. We got through 8 pairs of pants and 4 pairs of shorts.

Sunday was fantastic. Only one accident all day (poo).

Monday and Tuesday the nanny was here, thank god I was at work.

Today we have had 2 wees on the potty, 10 accidents, 2 of which have been poos on the carpet. We've had wee on the carpet and its almost as if he couldn't care less about gold stars anymore and goes whereever he is, even though I've said that we're about to go on the potty.

He's managed to stay dry during each 2 hour afternoon nap.

Is it time to give in? Or should I give it longer?

Don't bother with clothes on his bottom. Have the potty very close in the same room as you and he can sit himself on it. If he just ignores it and continues to soil the carpet he hasn't a clue what he needs to do or where to do it, think Sundays success was a fluke maybe because you were watching him all the time.

I'd go back to nappies between potty sits. Until he can understand that he needs to wee/poo before he does it, can tell you or nanny in time, and clearly understands where to do it, you won't make progress.
