How are exit polls conducted?

Are people asked immediately upon leaving the polling station? How are these usually so accurate? I’ve never been asked how I voted and I don’t know if I would tell someone either (suppose it would depend on how I was asked!).
How do they target enough people in enough areas to make it an effective prediction? Do they spread the time of asking throughout the day? Do they target the same areas each time for consistency?
Is there something I could read? I did google it but only briefly and would rather someone could summarise it succinctly for me 😂

My polling station is one of the ones used. I got asked last time, my daughter the time before. They are inside the polling station and grab you on the way out
