It's short for Saint Valentine's Day, isn't it? Maybe incorrect but I would assume including an apostrophe.

I would put an apostrophe but keep seeing it without today and I started to doubt myself.

The Saint is Valentine. It's his day.
So apostrophe is needed.

Although I suppose if you interpret it as being the day celebrated by 'valentines' then it should be Valentines' Day. A solo valentine is a sad and lonely concept.
