I would always write "spelt" because I pronounce it "spelt."

English is not my first language.but I'd always use "spelled"; purely because "spelt" just reminds me of flour.

Generally, I believe both 'learned' and 'learnt' are correct in British English. The Americans always use 'learned'.

You can also opt for 'dreamed' or 'dreamt' in British English, though 'dreamed' is more commonly used.

I’ve seen online posts where people who don’t use British English are confused by spelt. I believe that spelt, dreamt and learnt are British English.

I find it interesting that we have kept and built rather than keeped and builded.

Just speculating here, but I'd imagine the reason behind "keeped" and "builded" is just plain phonetical, as they'd be clunky to pronounce.

For the past tense and past participle of spell, both forms are valid. For the variety of wheat, only spelt is correct.
