In that sentence could only be ticket’s or tickets’, but I’d go with @StressyMcStressFace’s suggestion

it depends how many tickets there are.

If you have 1 tickets: Monitoring your ticket's progress.

If you have >1 ticket: Monitoring your tickets's progress.
