Is women really an adjective? Women priests, women doctors, women MPs - surely these chould all be female? One never hears man priests, man doctors, so why women? Is it wrong that this drives me nuts?

The word women in those phrases is a noun, not an adjective. Female is an adjective or a noun depending on context.
