sandwich fillings - inspiration please!

I need some ideas that will do both me and DS on the days I work and he goes to nursery. Ihave to make him lunch and tea so one meal has to be sandwiches or I'd go mad trying to think of things! I can't bear any kind of sliced processed meat (left over childhood trauma! ) and DS isn't keen on cheese. Any ideas? I like to make a pot twice a week -last time we had leftover chicken with cucumber and spring onion in mayonnaise, and I've done coronation chicken but I'd like some other ideas - meat and veggie would be good.

What about cold roast beef or pork?

Or hummous?

Or marmite and lettuce?

Egg mayonnaise?

tuna mayo
egg& watercress
chicken&stuffing
cheese^chives& mayo (make a little bit and maybye hell like it)
penaut butter& JAM
SAUSAGE&ONION (if you have some left over)
