Personal statements advice

I have been advised now that I'll need to complete a years access type course in order to convert my arts type degree to be considered towards a medical degree.
But having looked on various websites about applying for universities it seems these days mere A'Levels are not enough and a year volunteering in Hati or the local hospice is almost as important.
How on earth I can compete with an 18 year old with all the time in the world I don't know.
My previous background is in healthcare but I don't suppose bringing up three children will count for anything at all and I took quite a step backwards career wise when they were born.
