Can anyone tell me what specific language skill is being evaluated when children are asked to repeat a sentence verbatim during this test?

It is mainly looking at language processing skills and the child's ability to use grammar. Research suggests that children with expressive language difficulties have problems when performing sentence repetition tasks. It is also affected by auditory memory.
