we give them a potty to use to stop puddles on the carpet. But why do they then insist on bringing us the potty to inspect the contents, or better still try to empty and rinse it themselves

I know, I know. We started potty training on Saturday and you want to know DD's other toilet 'fetish' (probably not but I'm going to share anyway!) - insisting on inspecting the poo in her knickers if she's had an accident!
