6 AM Flight from nearby airport 45 mins away for a week's holiday with extended family.

Vs afternoon flights from airport 1 hr 45 mins away, flying with partner and child and meeting extended family at hotel and spend 5 days there with them. They'll still stay a week.

IMPORTANT we have a 1 year old :)

Really appreciate your opinions and advice please.

6am flight every time. I do this alone every few months with my 1yo and 3yo (have done since before the younger one was born). You will not have to allow time for traffic so can really streamline your time at the airport, and will get a full day the other end plus a nap as baby will have been up early.

And with the 6am option are you staying at a hotel/villa where you can't check in until 2/3pm or actually staying with extended family?

I'd do the afternoon flight personally. I hate early flights. We're doing one at May half term and I'm already dreading having to deal with over tired children all day.
