Maybe slightly overthinking this but off to Dubai with our 5 month old and have noticed some places sell sun safe swimwear -https://www.next.co.uk/style/su348211/e22296 but then others are UPF 50 - https://www.johnlewis.com/john-lewis-baby-seagull-upf-50-sunpro-suit-blue/p112760585

is there a difference ? I will be keeping my baby out of the sun but want to ensure they are protected if we take them in the pool!

I never know the difference but i always only buy the ones that specifically mention a upf. So I wouldn't buy the first one.

I’ve bought a few from next and I’m pretty sure the tag on them says upf50

I have always bought the Marks and Spencer ones which have long legs and arms and a matching Keppi hat - never had any problems with baby getting sunburnt etc.

Just be careful what colour you buy. DS had a white suit one year, he did a poo in his swimming nappy which leaked and it needed a machine wash to get the stain out, which I obviously didn't have on holiday, so I was one suit down (I usually buy two sets, one to wear and one drying on the washing line).
