Toddler dinners

I'm getting so bored of our usual dinners. DS 2 will try anything and isn't a fussy eater at all and will try whatever is put in front of him!
I want to continue to provide variety for him but I'm stuck on auto pilot with my cooking .
While he usually has dinner at nursery, when he does at home typical meals are as follows

Spag bol
Shepherds pie
Roast dinner
Jacket potatoes
Chicken wraps
Sometimes quick freezer stuff 😆 but always includes veggies etc
Fish
Pasta variants - tuna pasta, tomato pasta etc

All meals include plenty of veg etc and he loves it all. I have yet to find a food he doesn't like...

Ideas please!! Quick and easy and longer are both welcome

Oh I wish my nearly 2yo would eat that much variety😭 Don't have any ideas for you but try the weaning or food/recipes boards. They're usually really good for meal ideas

The wean in 15 book was useful. I still do some of the recipes from that.

Omelettes the amount of different things you can do is amazing.

I also make egg muffins and freeze for a quick dinner/ lunch.

Meatballs and a tomato sauce with veggies

You could do your on pizza and let DC add their own toppings.

Curry

Baked fish. Mine like cod or salmon. They also like tempura prawns and calamari (makes a change from nuggets.

We’re doing curry tonight.
Usually steak one night, meatballs and spaghetti, spicy chicken with rice & beans, fajitas, tacos..

I've found the cook books by Rebecca Wilson really great (What Mummy Makes) and also Sarah Rossi's 'What's For Dinner'.
