‘Extended’ family holiday

Hello,
I have booked a holiday to Cornwall for my partner’s birthday with our 6 month old (he will be 9 months by then). I thought it was a good idea to invite my SIL’s family (partner and twins) and then I invited MIL as I didn’t want her to feel left out (love SIL and MIL). I then felt bad on my parents so invited them too. So now we have a big family affair heading to a Llama farm, across 2 barns. Whilst I’m really looking forward to the trip, I’m also a little apprehensive. The grandparents have water to meet (our bad) but we are sure they will get along. We have things we’d like to do (golf 🙄, beaches, boat trips) but I’m not sure whether I should make a plan for everyone and offer the option or just plan for some time with my partner and bambino? Advice welcome on how to navigate/organise a large party whilst away.

Our family of 9 (ages 80 - 14) have been going away together for years. I’m the planner of the group so I draw up a rough day by day plan that everyone comments on. It’s then amended and any restaurants etc booked. Apart from those bookings nothing is set in stone and there is always some wiggle room.
