I just give my 1 year old pretty much the same as what we eat, taking portions out if I'm adding chilli though. Here's a few of our menu options and Ive noted if we both eat or just her:
Breakfast -
Blueberry banana pancakes from wean in 15 book (both eat)
Baked oats with berries (both eat)
Scrambled eggs and avocado (both eat)
If it's just her she'll have a banana, some strawberries, maybe cereal and a yogurt (she loves the dairy collective squeezey yogurts which are great as they can hold them themselves)

Lunch and dinner meals:
Chilli con carne (non spicy) (both eat)
Spaghetti Bolognese (both eat)
Pesto pasta (both eat)
Salmon and broccoli and sweet potato mash (both eat)
Peanut butter chicken curry (both eat)
Chicken leek and mushroom pie from Joe wickes book (both eat)
If it's just her I will giver beans on toast, pesto pasta or a quick risotto which i do with orzo and mashed butternut squash.

Snacks:
Cucumber, strawberries, dairylea triangle, avocado wedge, slice of cheese, those kiddy licious or organix crisps for 1 year old, fruity bakes from baby section, banana if she hasn't had one. If I'm really struggling I just give her an Ella's kitchen fruit pouch that she feeds herself with, really useful to just keep in the cupboard!
