do the organic ones look, feel or perform any differently to the normal ones?

From experience with other organic cotton - they tend to dry slightly faster for some reason.

I'm still not convinced by the wonder of organic cotton - the amount of times it needs to be washed to get rid of all the nasties living in it probably cancels out a lot of the pros by not pesticiding iyswim. I am probably skewed though and have my facts like thems that believe the nappy report
