Weaning baby/ extremely picky toddler

My toddler DS is an appallingly fussy eater. He has become this way since turning 2 earlier in the year. It seems that his diet just keeps becoming more and more restricted instead of getting any better.
I am finding it completely draining. I would hate for him to exist on processed foods given what has been in the media about them lately, but honestly I have to resort to them several times a week as he just refuses most cooked meals. I try to blend vegetables into sauces etc but it's like he knows and won't touch anything that isn't beige.
This is an issue in itself, but I am finding it is really affecting my motivation to begin weaning my 6mnth old baby. He has been EBF since birth, as was his brother. I have so far tried him with baby porridge which was fine, pureed sweet potato and mashed carrot and potato. These things were pretty much fine. However I just can't help having such negative feelings about weaning him as I tried so hard the first time to introduce the toddler slowly to a variety of new food. Now he is older he just rejects anything remotely healthy and it gets me really down.
I'm aware that I just need to keep offering and have addressed it with the health visitor but there is just no improvement. he is always offered vegetables/ fruit. He went to put a strawberry in his mouth the other day but seemed to gag before he bit into it, before it even went in his mouth properly.
Sorry this post is so long, I am just at a loss where to go from here and how to wean my 6 month old when it just means more work cooking/preparing more different foods for the two of them.
Has anyone got any advice or anecdotes where this issue has resolved itself in a positive way?

Maybe try blw this time round so you don’t have to make separate food?

Lots of friends have super fussy toddler and second babies that eat anything!
