We seem to be stuck in the same rut with meal times, spag Bol, lasagne, sausages, stew...

Hunters chicken....slice a chicken breast open like a book, add a stick of cheese, wrap up in bacon/pancetta/ham
make a tomatoey sauce with red pesto, a splash of wine, a squeeze of puree or ketchup or BBQ sauce, plenty of S&P, some herbs

you want enough sauce to roll the wrapped chicken in and to have a puddle for it to sit in, sometimes I cba and just use a small jar of stir through pasta sauce

Add some grated cheese over the top

into the oven for 40 mins, try and remember to turn it so the bacon is not flabby underneath and we have cheesey mash with ours.

toad in the hole is good too...I always sweat some onions or shallots before browning the sausages and recently found out that black pudding works really well in among the sausages

We have that with beans or red cabbage or sometimes just gravy

Fake Nando’s- chicken, Nando’s spice mix thing, pitta bread, halloumi, chips and salad

Roasted veg and sweet potatoes or cous cous.
Pasta bake with sausages and halved mozzarella balls on top.
Bacon and mushroom carbonara.
Chicken korma with rice and Nan bread.
Chicken or halloumi fajitas.
Homemade turkey burgers in pitta bread with salad.

Portion of fresh salmon with a smear of pesto on top. Roast in the oven on a square of foil. 200F for 25 mins. Super easy, pretty and delicious!

Mac n cheese in the slow cooker so ready for those nights everyone needs to eat at different times!

Chicken gyros, pitta and salad

Ham egg and chips

Jacket spuds and something from the freezer.

Make a pasta sauce from leftovers and have with tagelteli

Covetthee · 09/04/2021 09:35

Red thai curry
Massaman curry
Pad thai

All using the ready made kits, makes it so much easier.

chicken kebabs- marinated in yoghurt and some spices and herbs and done in the oven for 20/30 mins with salad and whatever veg you fancy

chicken cacciatore- simple and tasty

Also the tik tok feta pasta is surprisingly tasty- depending on if you like cheese and how strong, you can always substitute the feta for a different cheese

Aprilshowersandhail · 09/04/2021 12:42

Bbc good food for recipe!!

MrsBDarcy · 09/04/2021 12:51

Boursin macaroni cheese sounds good.
Here- sausage, mash and beans but "nice " sausages only
Pasta carbonara with veg on the side
Little else is greeted with enthusiasm now. I think we've been home too long

Risotto is a winner in this house, usually butternut squash and sage.

I always have some slow cooked braised steak in my freezer. I cook a load for about five hours in a low oven in a beef stock with sliced onions until it falls apart and batch it up.
It’s so handy for casseroles, making a beef curry it’s especially good for this, chunky chilli con carne or just heated up and served with mash and veg.

The same with minced beef slow cooked with diced celery, carrot and onion: spaghetti bol, chilli, lasagne, mince and dumplings or even tacos
