What's on the dinner menu?

Thought I'd start a thread on dinner ideas
I'm fed up cooking the same foods and could use a little inspiration. My kids are 3&2 and can't be fussy 🙄

Well Ds would eat pesto pasta or fish pie every night given a choice. He likes casseroles too, stir fry with noodles, mild curries, the typical things like sausages.

We insist he tries anything but will back up with toast and a yoghurt if he really won't eat it (he's known at nursery for 'eating well')

Maybe have a look at hello fresh or similar for some ideas, even if you don't sign up

Vegetable stir fry , because I have a load of baby Bok Choi to use

I have a £1 simply cook code if you are interested in trying a box.
Simply Cook
Cooking the mushroom and lentil ragu tonight, it's the only way DS will eat mushrooms! We also love many of the curries.

Other ideas (I don't eat meat but serve it to the rest of the family, so quite a bit is more on the veggie side)

Baked potato with tuna/ cheese / beans
Slow cooked stews (make in the morning and cook for a few hours) And goulash
Salmon teriyaki
Bolognese / Lasagne - can also be veggie aka lentil Bolognese or sweet potato, courgette and pepper lasagne
Leek and potato soup
Butternut squash soup
Courgette fritters
Sweet corn fritters
Sweet potato/potato/ chicken/ chickpea curry
Spinach and ricotta tomato pasta (rolled in lasagne sheets
One dish salmon + potatoes + peas + cream
