Leftovers. When I was working in the office, it was a bit more of a nightmare as I had to pack breakfast, lunch and dinner (yes, that's how long my days were). But if you only need lunch. Make extra for dinner the night before and bring the rest for your lunch/freeze more for other days. Now that I'm working from home, lunch is almost always leftovers from whatever we had the night before.

You can easily do a mix of healthy ready meals (think store bought lasagna with fresh veg) and things that are easy to cook and take 20-30 minutes (baked fish, new potatoes, veg - shove fish in oven, potatoes in pot to boil, steam veg or frozen peas in microwave, that sort of thing). Slow cooker stews or roasts (I do brisket and pork shoulder in the slow cooker often, they last for usually two dinners worth). Nothing wrong with a simple pasta or store bought pizza a couple nights a week, or a store bought quiche and salad things.

I love The Quick Roasting Tin by Rukmini Iyer. All recipes are 10 mins prep and up to 30 mins in the oven, also has a make ahead lunch section.
